Roasted Tomatoes

This recipe will have you coming back for more and more! Wow your guests with a simple yet incredible flavour.

  1. Heat your wood fired oven to 200C or higher.
  2. Slice your tomatoes lengthways and add to your Alfresco Chef Cast Iron Pan.
  3. Drizzle with olive oil and season with salt and pepper before adding four crushed cloves of garlic.
  4. Add approximately 1 cup of balsamic vinegar per 300g of tomatoes and a few sprigs of thyme to the pan.
  5. Add to your wood fired oven allowing the tomatoes to soften and the balsamic vinegar to reduce to an incredible glaze. This process should take approximately 30 minutes, add more balsamic vinegar if required.
