- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
- Preheat your wood-fired oven to about 800°F (425°C), ensuring the flames have died down and the oven floor is evenly heated.
- Punch down the risen dough and divide it into two equal portions. On a floured surface, roll out each portion into a round circle, about 10-12 inches in diameter, for individual-sized pizzas.
- Transfer the rolled-out dough to a pizza peel dusted with cornmeal or flour to prevent sticking.
