- 1 cup rolled oats (gluten-free if needed)

- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of salt


1. Preheat your wood-fired oven to around 350°F (175°C).
2. In a large mixing bowl, combine the rolled oats, chopped nuts, and dried fruit.
3. In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, and a pinch of salt until well combined.
4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
5. Transfer the flapjack mixture to a greased baking dish or lined baking tray, pressing it down firmly with the back of a spoon or spatula to create an even layer.
6. Place the baking dish or tray in the preheated wood-fired oven and bake for about 20-25 minutes, or until the flapjack is golden brown and set around the edges.
